Italian Regional Cuisine – Emilia Romagna (September 16)

Nestled in northern Italy is a lesser known region called Emilia Romagna. While it doesn’t have the same tourist appeal as places such as Florence and Venice, it does produce some of the top ingredients that make Italy famous. It’s known for its balsamic vinegar, sausage variety, and Prosciutto di Parma, and the chef’s menu appropriately represents this region. Students will make Parmesan crispy pockets, ragu alla bolognese, and a strawberry tart with aged balsamic vinegar.

Ocean’s “Catch of the Day” – Alaskan Halibut (September 28)

Alaskan halibut is the country’s favorite white fish as it’s high in protein, low in fat. During this class, the instructor walks students through the steps for making nutritious, yet delicious meals. The menu includes halibut goujonettes, fresh grilled halibut topped with chive oil, and cherry clafoutis.

Regional Cuisine: Fantastic Fusion from Coast to Coast (September 30)

Take a journey across the globe without leaving Colorado. The global dishes students learn to make will certainly impress during any dinner party, and they come from countries such as Spain, Japan, and Italy. The chef will demonstrate proper grilling techniques as well as how to peel shrimp before helping students prepare tomato gazpacho, grilled New York strip steak seasoned with smoked paprika and togarashi, and guava cheesecake with candied macadamia nuts.
